Black Bean quesadillas (no cheese)

Ingredients
- 1/2 cup Black beans 15 oz can has 1.5 cups
- 1/2 cup corn
- 1/4 cup red onion, diced
- 1 tsp garlic, minced
- 1/4 cup cilantro, chopped
- 1 Tbs taco seasoning
- 4 flour tortillas whole wheat
- 1/2 cup tomato, diced
- 1 cup avacodo, chopped
Directions
Prep
- Drain the can of beans and rinse lightly. Add the beans in a large bowl along with the frozen corn
- Rinse the cilantro, remove the leaves, and chop roughly. Dice the onion and mince the garlic. Dice the tomatoes. Core the avocado and dice.
- Add the cilantro, onion, garlic, tomatoes and avocado to the bowl with the beans and corn. Add taco seasoning and stir everything until evenly mixed.
- Place a half cup of the filling on one side of each tortilla and fold In a non stick pan, Cook filled tortillas on both sides over medium heat until brown and crispy.
