Avocado Toast with Spinach and Egg

Ingredients
- 1 tsp olive oil
- 4 eggs
- salt, to taste
- pepper, to taste
- 4 slices whole-grain bread (gluten-free if needed)
- 2 avocados
- 1 cup baby spinach
Directions
Make
- Take a shallow microwave safe Spray olive oil and make a bed of spinach on it.
- Crack an egg on top of the spinah and cover with

- Repeat steps 1-4 with each
- While eggs are cooking, toast bread and slice
- Lay avocado slices on toast (or spread on if they are very ripe), sprinkle with salt and pepper to taste and top with the cooked spinach and egg. Enjoy!
