  1. Take a shallow microwave safe Spray olive oil and make a bed of spinach on it.
  2. Crack an egg on top of the spinah and cover with

  6. While eggs are cooking, toast bread and slice

Plus adding the spinach at the base before cooking the egg, allows you to scoop the spinach along with the egg and place it on directly on the toast with avocado.
